WHere is a home-style take on a beverage found on a new drinks list. It's a batch pre-mixed that is loaded full of flavours of a holiday season, which makes it excellent for your festive gathering. Any leftover syrup to use in brunch beverages, puddings, or for more rounds of bikinis.

Makes enough for 10 guests
Ingredients for the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (makes 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch
Method
For the Cordial: Place the listed items in a pot, bring to a light boil, mixing to dissolve. Then, take off the burner and leave to cool down fully. Pour to a clean bottle, seal and refrigerate it in the fridge, where it will keep for up to one month.
Preparing the Cocktail Base: Combine the specified spirits and syrup in a large bottle, allow it to infuse for one hour, then filter it best through a fine cloth, making it fully clarified.
When ready to serve: Measure 85ml of your premix into a cocktail shaker packed with ice, gently stirring carefully for about 60 seconds to cool it down. Filter to a chilled martini glass or equivalent, top with a few cranberries adding the final touch using a quick spritz of mandarin oil over the drink.
